Optimalisasi Nilai Tambah Ubi Jalar Melalui Peningkatan Keterampilan dan Inovasi Produk Pada Petani dan Pelaku Usaha Menengah Kecil Mikro

The abundant sweet potato resources in the X area have not been optimally utilized due to limited production activities and minimal application of agricultural technology. Despite this, sweet potatoes have advantages in cultivation, availability, nutritional value, and processing potential. This community service program aimed to enhance community knowledge and skills in processing sweet potatoes into sweet potato flour and sweet potato-based snacks that are healthy and economically valuable. The activity was conducted in the X area and involved 30 participants consisting of productive-age women, including micro, small, and medium enterprise (MSME) actors, farmers, and wives of sweet potato farmers. Knowledge enhancement was implemented through lectures supported by illustrated presentation media and a pre-test and post-test, while skill development was achieved through hands-on training and mentoring in processing sweet potatoes into ready-to-eat products. The results indicated a quantitative and qualitative increase in participants’ knowledge measured by pre-test and post-test results as well as participative observation. Participants also showed improved skills by successfully producing various sweet potato-based ready-to-eat products. This program effectively improved participants’ capacity to diversify local resources and represents an initial step toward increasing economic value and community welfare.
